In this installment of Venga’s Server of the Month series, we recognize Rachael from STK Midtown, a part of The ONE Group. Rachael stood out among her colleagues as a shining example of genuine hospitality.
How did you get started in hospitality?
Rachael: I started in hospitality when I was still in high school, my first job was as a hostess at an Italian restaurant in Orange County. I stayed there for a few years, running the front desk as well as coordinating private events. My next job was at a steakhouse in Irvine, where I managed the front desk and about a dozen hosts. I never wanted to be a server but I needed a more flexible schedule for school so I just went for it.
What is the best part of being in hospitality?
Rachael: Working in hospitality is just so much fun. The environment is more social than any other profession and you get to meet so many different people and personalities. I still keep in touch with some of my regulars from past jobs and I’ve made some of my closest friends in this business.
What is one piece of advice that you would give to a brand new server?
Rachael: My advice for a brand new server would be to pay attention to what your guests aren’t saying so you can give them the experience they’re looking for. Everybody wants something different from their dinner out and if you can anticipate their needs they’ll leave knowing their meal was worth every dollar. And don’t take it too seriously, if you get stressed it shows.
If you could have any meal, what would it be?
Rachael: If I could have any meal, it would definitely be seared scallops and alaskan king crab to start. Then I’d have a bone-in filet topped with foie gras, any type of gnocchi or mac and cheese with truffles on it and then finish with a warm, buttery piece of cake. Each course would definitely be paired with a great wine.
